Jørgen Dejgård Jensen 

Jørgen Dejgård Jensen is an economist, and he is currently a professor at the University of Copenhagen. His research is focused on economic aspects of food production, food consumption and regulation, and he has published more than 60 articles on these topics in international academic journals.

Specific topics include:

  • taxation of unhealthy food products
  • health economic impacts of dietary behaviour
  • regulation of antibiotic use in livestock production
  • economic incentives in relation to food safety
  • consumers’ demand for food products with specific characteristics
